INFUSER ozone generators for kitchen exhaust
As is well known, the high fat concentration in the kitchen exhaust air is a particular problem. Filters clog very quickly and the grease is deposited everywhere in the exhaust air system. In addition to the fire hazard, these deposits also form an ideal breeding ground for bacteria and fungi, which can very quickly lead to a hygienic problem. Even the regular filter change and the prescribed cleanings of the exhaust air system do not eliminate the problem permanently. Especially since residues of the deposits always remain in hard-to-reach places. The use of ozone to clean the kitchen exhaust air can help here.
The use of INFUSER Ozone generators
The ozone is ideally injected into the exhaust hood or directly into the kitchen exhaust air immediately afterwards. Sensors measure the volume flow and ensure that the optimum amount of ozone is injected. In the exhaust air, the ozone reacts immediately with the substances it contains. Fats, odorous substances, bacteria and spores are thus rendered harmless, precipitate and are blown out as microparticles with the exhaust air. The reactivity of the ozone is so strong that even existing deposits are degraded. The gas also penetrates into areas that can hardly be reached during normal sewer cleaning.
The ozone generators of the Compact line are suitable both for new construction and for retrofitting of exhaust air systems. There are no limits to the size of the system and thus the ozone requirement. Different unit sizes up to a capacity of 80 g/h are available in the series. In case of higher demand, several generators can be combined. The ozone generators do not have to be installed in the immediate vicinity of the exhaust hood. It is also possible to place the unit in a suitable adjacent room. In this case, the generated ozone can be transported with a Teflon hose up to 50 m long to the point where the injection into the exhaust air is carried out.
How is the ozone generation?
The generators use normal ambient air to produce ozone. The air is cleaned and the pure oxygen is extracted. In a second step, highly reactive ozone molecules are generated from the pure oxygen by applying a voltage. No further chemicals have to be added. Normally, no ozone can escape from the module into the ambient air. This is important because high concentrations of ozone can cause health problems in humans such as inflammation of the mucous membranes, irritable cough, tears in the eyes and severe headaches. These effects are known from hot summer days, when the high ground-level ozone concentration can cause such reactions, especially in children and sensitive persons. For this reason, the Comfort line ozone generators from INFUSER are equipped with additional sensors. The sensors measure the ozone concentration in the vicinity of the devices and switch off the generation process if abnormal values are detected.
To comply with the strict requirements of DIN EN 16282-8, the Infuser Compact first generates pure oxygen in its oxygen concentrator 95% and then feeds it to the high-voltage generator for actual ozone generation. In contrast to other commercially available solutions using tube technology or the through-flow principle, the Compact can also be used with exhaust air volumes above 2,500m3/h. In accordance with the standard, ozone is not produced from air but from pure oxygen, i.e. without the formation of pollutants such as NOx or HNO3.
The advantages for the operator
